Cheeseburger Salad

It’s a beautiful Spring day here in the midwest, and Mother Nature has finally agreed to let us have some sunshine.  I just got back from a business trip last Friday, and have been loading up on veggies ever since.  It is so hard to stay on track when traveling.  I love a good cheeseburger, and have created this cleaner version of a cheeseburger salad to satisfy and keep me on track.  Give it a try, and swap out any of the ingredients you don’t like for something you do.  Making good food shouldn’t be complicated.

You will need:

  • 1 generous handful of arugula
  • 1 grass fed beef patty – cooked (pro tip: use leftovers!)
  • 1 small avocado, chopped
  • Cheese cubes – I use raw, sharp cheddar
  • Veggie assortment of choice: tomatoes, bell pepper, microgreens, carrots, etc.
  • Dill & Garlic or pickle sauerkraut – I have used Wildbrine and Farmhouse Culture
  • Spicy mustard
  • Olive oil

Mix all the ingredients together and enjoy!  I use the mustard and olive oil as a dressing.  Between that and the kraut, you will not miss having an actual salad dressing.  Feel free to add bacon to make it extra special!
